How long will your products last?
Both the honey and the hot sauce will last indefinitely.
The sauce will slowly continue to ferment, for around three years it will continue to develop, becoming more rounded just like a good red wine. After this time it will slowly become more and more acidic, turning very sour but it will not spoil.
The honey will also continue to ferment but at a much slower rate.

Do you grow your own chillies?
No, I source locally in season, with produce coming out of Leongatha, Garfield and Shepparton. Out of season I source from Bunderburg, Queensland.
What does your locals only series sauce mean?
The locals only series is a range that started during covid when it was hard to get produce down from Queensland because of bush fires and petrol shortages.
I posted on social media, saying looking for peppers and the response was overwhelming. People in my area were more than happy to help. So I was able to produce sauce made entirely out of produce from my local area.
The name is also a play on the long standing surf culture I grew up with.
What is fermentation?
Here at Pickle my Chili we use a wild fermentation process, meaning there is no added starter instead the natural lactobacillus found on the peppers begins the fermentation. This process breaks down the sugars in the vegetables, lowers the ph, preserving the food while increasing its nutritional value.
Eating lacto-fermented food has many health benefits, including improving digestion and metabolism, absorption of iron and other nutrients and general overall health.
Why do you ferment in Ceramic ?
We use traditional ceramic crocks as it’s the only vessel that will carry the umami flavour from batch to batch. As our crocks mature our sauces become more complex and flavourful.
